Within minutes of arriving at this rustic but refined compound, you realize what a welcome shift it heralds for hospitality in the Catskills. With its 28 cabins and 12-room farmhouse and social hub, it marries Scandinavian-style minimalism and throwback Americana, with echoes of the Borscht Belt summer resorts that used to be ubiquitous in this part of the state.

Inness, a 220-acre resort just south of the Catskill Mountains, does many things right, but the one that impressed me most—the amenity I didn't know I needed until my husband and I arrived—was space. With its cathedral ceiling and a few simple furnishings, my room felt mind-cleansing, and over a snowy weekend I spent long hours reading on an ample linen-covered couch that faced the landscape.

It's meant to be a refuge, a retreat of the transcendentalist variety. "That's the sort of tension we're interested in–how can we make quiet, well-designed spaces that feel humble?" At INNESS, each day aims to be a reflective adventure.

The 220-acre resort features a clubhouse (actually a sleek farm-to-table restaurant with Scandinavian Brutalist furniture), 14 duplex cabins, a 12-room hotel in a rustic Colonial style, two saltwater swimming pools, two tennis courts and a rustic golf course designed by King Collins of Chattanooga, Tenn., which Mr. Somer described as the “bad boys of golf.”

Taavo Somer and Post Company looked to local Dutch Colonial architecture and New England traditions when designing the cabins and farmhouse at this pastoral escape, set on 225 acres with gardens by AD100 green thumb Miranda Brooks.

High-design marries nature at this beautiful, brand-new retreat. There are 28 elegant cabins and a 12-room farmhouse, a lobby bar, library room, and game room. The design is minimalist yet sophisticated, and has a lived-in vibe.

On a recent Thursday, the place was packed with people dressed in flannel and puffer jackets. In the main bar area a mezcal, Campari and persimmon cocktail is shaken to the beat of music that sounds more Lower East Side than upstate. It's the mix of urban comforts and rural charm that seems to be hitting the right note with punters.

Situated on 220 bucolic acres, Inness is perhaps the closest thing to a modernized version of the old Catskills resorts of yore. Guests can check into one of 28 cabins with kitchenettes or book an individual room in the 12-room farmhouse. The sprawling campus also has a restaurant; a nine-hole golf course by King Collins (designer of Sweetens Cove in Tennessee); a sports outfitter; two swimming pools; tennis courts; hiking trails; an events barn; and a farm shop.

Named after the prominent 19th-century American landscape painter George Inness, this new hotel and members’ club in Accord, New York, certainly lives up to that heritage. Here, where minimalist buildings sit in a patchwork of untamed flora, the idyll calls to mind a cinematic backdrop from another era—or perhaps a painting by Inness himself.

Oftentimes being fully present in nature is ‘wellness’ enough, and there are few places as bucolic as the Hudson Valley for achieving this sort of pastoral-induced relaxation. Having just opened this past summer, Inness is a newcomer to the Catskills hospitality scene and their strong design, appreciation of the landscape, and killer restaurant make this boutique hotel a destination worth booking.

Designed by Taavo Somer in collaboration with Post Company, Inness features rooms with custom furniture and lighting made in collaboration with Roll & Hill, while the restaurant beckons with lime-washed walls and vintage chairs reclaimed from a Belgian church. In the warmer months, guests can stroll the grounds cultivated by landscape designer Miranda Brooks as a showcase for indigenous Catskills flora.
